2026.10.30What's new
Sake, Japan’s traditional rice-based alcoholic beverage, is known for its diverse aromas and flavors, which vary depending on the ingredients and brewing methods used by each brewery. On November 7 and 8, 2026, Dam SAKE Festa takes place in Nagoya City, Aichi, introducing visitors to a different way of enjoying sake: dam-aged sake, known as “dam sake.”
Unlike sake aged in conventional brewery storage facilities, dam sake is stored inside dams, where relatively stable temperatures provide an environment for aging. This project brings together 13 sake breweries from Aichi and Gifu in collaboration with four dams, offering a new perspective on sake aging and the region’s brewing culture.
The project features sake aged at four dams: Yahagi Dam, Maruyama Dam, Agigawa Dam, and Ori-gawa Dam. By using the relatively stable temperatures inside the dams, the project explores how a different storage environment and the passage of time can influence sake’s aroma and flavor.
At the 2026 event, visitors can compare 36 varieties of dam-aged sake, with aging periods of one, two, or three years. Tasting them side by side offers an opportunity to discover differences associated with aging and find varieties that suit individual preferences.
The event takes place at Hisaya-odori Park in central Nagoya, making it convenient to combine the tasting with sightseeing and shopping in the city.
